Current Stats and Low Carb Mock Pancakes

Ok, so at my last post I was 180 LBS.
Currently I am 165 (the pic above is the only body pic i've taken since the baby was born). 
 I still have 15 lbs to go to reach PRE-BABY weight and a whopping 35 lbs before I hit my BIG GOAL! The BIG GOAL being that my husband sends me on a
$1000 new wardrobe shopping spree!

During the holidays I slacked off the low carbbing quite a bit. I gained 3 lbs. Although, LAST YEAR I gained 15 lbs during the holidays so I feel pretty good with only gaining 3! Needless to say, my NY resolution was to stick with the low carbbing and start back on the treadmill.

Today was my first double win...you know...LC AND TREADMILL!
I fixed low carb mock pancakes and did 2 miles on the mill.

Low Carb Mock Pancakes

First of all, they are REALLY good and actually do very much resemble pancakes in taste. Making them and flipping them like real pancakes is a different story which is why they are all scrambled up like that. By the time I'm done with them, they're more like...scrambled pancakes. Doesn't change the taste though, they are really good!

This is a sugar free sheila recipe, which she calls Cream Cheese Pancakes. 6 Net Carbs.

3oz cream cheese
2 eggs
1 tsp cinnamon
1-2 packets of splenda (my addition to the recipe)
Sugar Free Syrup (DaVinci's sugar free syrup is really good!)

Melt cream cheese in the microwave for about 30 seconds. Add the eggs and beat together until smooth. Pour on pam sprayed skillet on low/medium heat for a few minutes. Flip and let cook another 2 minutes.

I am so excited about getting back into this full swing! I've found a ton of new recipes that have just blown my LC mind! The myth that LC has to be boring has never been so false!

Low carbing is not cut and dry. What works for me may or may not work for you.
