This Weeks Low Carb Eats



I wanted to share some of my low carb eats from this week with you. 

Ok, first of all. I'm a busy mom of 2 so I don't have the time to take food pictures with great lighting using my fancy camera. Iphone pics only so bear with me on the food pics.


Spinach Lasagna
 The above picture was one of THE BEST lasagnas i've ever tasted! Not the best low carb lasagnas...just one of the best period! My mom said it tasted like it came from a gourmet restaurant. WIN!

Cauliflower Crust Pizza

OMG I was so suprised at how good this was! It's really easy to make too.


The crust is made from cauliflower.
This is a pic of the cooked cauliflower crust before toppings were added.

Don't go into expecting it to taste like pizza dough. It's taste amazing...you just have to not be expecting it to taste like regular pizza.
It also doesn't get very crispy but I ate it with a fork and loved it.

Taco Salad

Good ole taco salad....shelless of course but who cares?! It was delish!





Omelette Muffins

These are really great whether your low carbbing or not. They are easy to make and can be kept in the fridge for up to a week for a quick nuke and eat breakfast or even just a snack. My 3 year old helped me make these and he loves them for breakfast too!

FIRST
spray your muffin tin with pam
Put your omelette fixins in each muffin tin.
 We did (cooked) bacon and cheddar cheese.


Second
Beat about 8-10 eggs together and then pour some into each muffin cup.
Bake at 350 for about 10-15 minutes or till they are big and fluffy and don't wiggle anymore.



Store in ziplock baggie in the fridge for up to a week.
Pop them in the microwave for about 30 seconds for a quick and easy breakfast!




BLT Salad

Well, I don't like tomato so mine is really a BL Salad. I used spinach leaves, bacon, and homemade Miracle Whip (which is just mayo with a bit of Splenda added to it.) So good!



I'm proud to say that I went TOTALLY SUGAR FREE this week!
I hit the treadmill twice, doing 2 miles each time (need to strive for more treadmill time).
and lost
5 lbs!!

Sugar is totally out of my system and it feels wonderful!!

  1. Thank you for helping to inspire me to go low carb/sugar free!! Since Saturday I have lost 4.6 lbs! The first few days I was a bear to be around (and I'm sure my children didn't appreciate it) but after getting off the sugar I feel like I have a ton more energy and I can tell my skin is clearing up! It's crazy how it does that. Anyway, I enjoy your recipes and tips...they help me to keep going:) Looking forward to reading about your progress!

  2. Wow, way to go!! You stuck through the toughest part (which I never sugar coat for anyone--its brutal isn't it?!) but getting through that is so worth it! I am so glad I could help in any way and your comment is inspiring TO ME! Sometimes I'm like...is anyone really reading this stuff? But to know i'm helping someone to become healthier and lose weight is so rewarding and makes me know keeping this blog going is a must! Keep me in the loop on your progress, i'd love to hear more about it and if you have any questions just ask! :)

  3. I'M definitely reading it! Please keep it going because I will be telling others about it as well:) So far I have made 4 of your recipes this week and have tried/loved the snack ideas (ie: Diet Coke, EAS shakes, and Cocoa almonds-YUM!!!) Right now I'm in the middle of planning next week's meals so I'm scanning your blog for more ideas:) Down 5.1 so far....week 1 weigh-in is tomorrow! I'm so excited to finally start to notice a difference in the way my clothes feel!

    We have similar stories in that I too weighed 201 after my first born and then 225 with my second. I was able to get down to 160 about a year ago but after we came back from the holidays this year I had crept up to 174:( Soooo....my goal is to get down to 150 which is good for my height (I would LOVE to be 145 but that gets really hard to maintain) AND I talked my husband into giving me $200 if I hit my goal! I'm "Pinning" away on clothing styles!

  4. I'm reading as well! Please keep posting! I followed your blog 2 years ago(ish)...and lost 18 pounds and reached my goal of 130 pounds. After that, I got pregnant, miscarried, gained 20 depression pounds, got pregnant again, gained another 46 pounds, and had my little man in November. I was 196 pounds when I delivered (the biggest of my 3...my other 2 I was 174 at delivery), when I went back on SFLC last week I was at 158.6, and am now at 152.6. Your blog is motivating, and inspiring, and keeps me going. I keep checking daily to see if you have any updates. BTW, I'm local in NWA, and we actually met at a Christmas Bazaare a few years ago where you were selling your rice heating pads, and I was selling Scentsy. I'd love to get together for a playdate some time!

      So sorry as I am just now seeing this comment! Congrats on the new baby! I'm at 157 right now so I am starting at where you started this spring. It's been a few months now, how is your progress? 130 is also my ultimate goal! I do remember you from the Christmas Bazaare. I believe we were actually FB friends at one point if I'm not mistaken? I looked you up after reading this and did not find you though. I hope to reconnect and congrats again!

Thanks for visiting, I love hearing from you, however it still always surprises me how many mean and rotten comments I receive, so please remember that I post what I eat merely as a suggestion of ideas for others. Low carbing is not cut and dry. What works for me may or may not work for you. Also, I live exclusively low carb, but I don't live my life counting them so I don't often include the net carb counts on recipes. Happy low carbing ya'll! :)
