Alfredo Sauce may just be one of my favorite "food toppings" of all time. Oh so luckily it's also easy to make and it's low in carbs! For years now I've continued to enjoy it on many things OTHER than pasta. One of my go-to Alfredo recipes is Low Carb Chicken and Broccoli Alfredo...Noodle-less of course and it's so simple to make that it's almost silly!

I may be french toast's biggest fan, but it's been years since I've eaten the "bread" version. However, this "French Toast Egg Puff" (at least that's that what I call it) is an amazing alternative and sometimes I eat it several times a week! The basic recipe is just 3 ingredients and the result is a thick, puffy, sweet, and very similar in taste to "real" french toast!

This is a recipe I tried out of one of my all-time favorite Low Carb Cookbooks called 500 More Low Carb Recipes by Dana Carpender. It's a collection of recipes submitted by other low carbbers and there are some really fantastic recipes in it! We eat a lot of chicken in our house, and so I'm always on the look out for a new (but simple) way to prepare it. This recipe is quite good! It's creamy, it's cheesy, and my husband said he thought it was even better the next day as leftovers!

Baked Eggs... obviously i'm not the first to do bake an egg, but since I didn't know how to do it and wasn't following a recipe, I'd consider it one of my personal favorite kitchen experiments of all time! I recently baked an egg in an avocado which turned out amazingly (post to come!), so I knew I could probably easily bake them in our ramekinsas well. I didn't have much of an idea beforehand of what I would put in them, but i'd just had a spinach and Parmesan omelet a few days before so I went with that and OMG was it goooood!!
Cauliflower is such a great staple veggie on a low carb diet. It can be used as a low carb alternative for so many different things. My favorite cauliflower recipe is Cauliflower Mock Mashed Potatoes. At my house we call them "Caulitaters" and I know it's hard to believe but my husband has learned to love and like these MORE than regular mashed potatoes, which he only eats now once a year on Thanksgiving and that's only because someone else has fixed the meal. Caulitaters were one of my first low carb recipes years ago. They gave me hope that this "new way" of eating could actually be quite yummy!

If you follow my facebook page, you'll see my low carb cheese chips a lot. They are a favorite of mine that i've been making since week one of becoming a low carbber 4 years ago. I'm a crunch-a-holic and sometimes I just want a crunchy snack and these are one awesome alternative to the greasy, fatty, bagged chips. These really are amazing and can hold their own against any dip! Plus there's just so much that you can do with them once you learn how to make them...nachos, pizza crust, taco shells... Ok, how about I just get to the good stuff so you can be on your way to a crunch fest of your own!
I love coming up with new ways to use cauliflower because for many people living a low carb life, cauliflower is a main staple. You can use it to make a low carb alternative for so many different foods including mashed potatoes, pizza crust, rice, etc. So I make sure I always have a fresh head of cauliflower in the fridge, as well as a few bags of frozen cauli florets in the freezer. These cheesy cauliflower bites were the result of needing to use my cauliflower before it went bad, and craving something cheesy, fun sized, and easy to make. I paired mine with mustard, but ketchup, sour cream, hot sauce, and barbcue sauce are a few yummy dips for these that come to mind.

These zucchini mini pizzas are such a great little snack! Being the pizza loving family we are, I am always looking for new ways to make a great low carb alternative to my families usual takeout pizza. These zucchini pizzas are full of flavor and obviously so much healthier than the carb loaded kind. Another plus, is that you can make these faster than your favorite pizza can be delivered!
