
This is a recipe I tried out of one of my all-time favorite Low Carb Cookbooks called 500 More Low Carb Recipes by Dana Carpender. It's a collection of recipes submitted by other low carbbers and there are some really fantastic recipes in it! We eat a lot of chicken in our house, and so I'm always on the look out for a new (but simple) way to prepare it. This recipe is quite good! It's creamy, it's cheesy, and my husband said he thought it was even better the next day as leftovers!
Brenda Theune's Cheesy Chicken
Ingredients
2 boneless skinless chicken breasts (I used boneless skinless strips)
4 oz softened cream cheese
2 tablespoons softened butter
2 tablespoons whole cream
1 tablespoon minced onion (I omitted this simply because I didn't have any)
1/4 teaspoon seasoned salt
1/2 cup of shredded cheese (I used cheddar and I used more than 1/2 a cup)
Directions
1. Preheat oven to 375. Lightly grease a 9x9 inch baking pan with nonstick cooking spray and place your chicken in without overlapping.
2. Mix the cream cheese, butter, cream, onion, and spices and spread the mixture evenly over the chicken.
3. Spread the cheese on top and bake for about 45 minutes or until chicken is done. Let it rest and cool a bit after taking it from the oven.
Carb Count
If you follow the recipe and use the 2 chicken breast it calls for, the recipe yields 2 servings at 3 carbs each.

DeleteThe reddish color you're seeing in the photograph is just the cooked cheddar cheese. Its just the lighting that makes it look red. (I thought it turned into chicken parm. too! LOL!).
DeleteAll the ingredients have carbs - but your highest count would probably come from the heavy cream, then the cheeses.
(But as far as low carb recipes go, these are 3 dependable, low carb staples!).

ReplyDeleteThis was really good! My husband, kid, and I was pleasantly surprised how good it was. I changed it up a bit and seasoned the chicken strips with pepper and garlic powder in addition to salt. I also added sliced white mushrooms on top of the chicken prior to adding the cream mixture. Thank you for the recipe! This will be a regular in our household. :)

ReplyDeleteMy son, age 25 recently showed high insulin levels and I'm attempting to help him w his meal plan. He's only allowed 50 grams of carbs per day. Keep in mind he's 5ft 8 in. tall and only 130lbs if that. Your recipes are helpful ~ thank you

For now, I'm counting, but its good to see a future where I can "just eat" (mindfully) without charting everything like a diet. I don't mind it for now though, its keeping me successful. 7 down, 33 to go!

ReplyDeleteCan you use Cream of Chicken Soup instead of heavy cream and cream cheese? I wonder how that would taste and would probably cut down on the fat and carbs..
ReplyDeleteIt would definitely not cut down on carbs. Read the label! Plus, if you're eating low carb, fat is not your enemy.

ReplyDeleteI made this for dinner and it was delicious....I cheated a little on the recipe and added a few tablespoons of Hidden Valley Ranch dip mix to the cream cheese mixture.....I thought it was very good.....
