
These low carb nachos are hearty enough to be dinner, and yummy and presentable enough to serve as an appetizer at a party. Do you like cheese? How about a chip MADE OF cheese?! You so won't be missing the chip here, these nachos are awesome!
Ingredients
Pre-made Seasoned taco meat (beef or turkey) *optional
Your choice of fix-ins (sour cream, olives, jalapenos, tomatoes, shredded cheese, shredded lettuce, etc)
Directions
Once you've made your Low Carb Cheese Chips, the rest is up to you! We made tacos a few nights ago so I had some left over taco meat which I sprinkled on my "chips," along with a dollop of sour cream, some black olives, and jalapenos. Then I heated up a bit of Mexican Velveeta for dipping (Seriously...cheese to dip my cheese in..yes!) and then went to town!
In case you're wondering or concerned about how much cheese (dairy) this is...yes, it's a lot of cheese and yes, you can eat cheese on a low carb diet, but in some cases too much can cause weight stalls. My loose rule of thumb about cheese is that if I eat a lot one day, i'll go easy on it for the next few days. Simple as that.
