Chicken enchiladas are one of my favorite foods, and the recipe I'd been making in my pre-low carb years was easily transformed into a just-as-yummy low carb version. And seriously, this recipe is super easy and has always been a hit. I make these for potlucks and house guests frequently and NO ONE has ever suspected it's low carb-ness!

Pizza is my weakness. Luckily, there are so many amazing low carb alternatives to the carbby kind, that i've totally been able to satisfy my pizza cravings! On the nights I know my family will be getting delivery, I plan ahead so I can make my own without feeling left out of the pizza party. This has been my number one go-to low carb pizza for years because it's the most simple..and never disappoints on flavor! As a bonus, I also fix this for my kids quite often. They can also help make the whole thing, which is fun and we usually end up with pepperoni happy faces :)

Like many other low carbers, I love using pork rinds as breading for meats. This idea came to me as I was making one of my favorite quick and easy lunches...deli rollups. I'm from the south, and while I do try to bake most things as often as possible for health reasons, I cannot deny my love for fried foods! I used pork rinds as breading, fried it up and this turned my usual cold deli roll up into a hot and crispy on the outside, melted cheesy awesomeness on the inside-Fried Ham and Cheese Rollup!
