
My taste buds were blown away with this so-simple-it's-silly recipe for making a totally amazing, cafe worthy breakfast or brunch with an egg and avocado. Bake the egg in the avocado!
I'd love to credit someone's food blog or website for this genius idea, but I saw this idea so long ago...somewhere I can't remember..and I got around to trying it only recently. A total winner! It's also great because I usually buy too many avocados with not enough ideas on what to do with them and one or two always go bad before I eat them. This is a really neat recipe to try!

Directions
1. Cut an avocado in half lengthwise and remove the pit. You can use both or just bake one and save the other for later.
2. Spoon a little extra out of each pit-hole to make room for the egg.
3. Put your avocado half(ves) onto a cookie sheet and crack 1 egg into each avocado. Some of the egg will spill over onto the top of the avocado. This is totally fine. Next time though, I think i'll add some cooked bacon crumbles in the pit of the avocado BEFORE I add the egg. That sounds amazing! Bacon...mmmm!
4. Add whatever you'd like on the top. I salt and peppered mine and added some fresh shredded Parmesan cheese.
5. Bake at 375 for 15-20 minutes or until your egg and yolk are as cooked as you prefer. The avocado will be hot/warm, but not mushy as you may suspect.
