Low Carb Fried Ham and Cheese Roll-Up

Fried Meat and Cheese Rollup

Like many other low carbers, I love using pork rinds as breading for meats. This idea came to me as I was making one of my favorite quick and easy lunches...deli rollups. I'm from the south, and while I do try to bake most things as often as possible for health reasons, I cannot deny my love for fried foods! I used pork rinds as breading, fried it up and this turned my usual cold deli roll up into a hot and crispy on the outside, melted cheesy awesomeness on the inside-Fried Ham and Cheese Rollup!  




Ingredients
Pork rinds (original or flavored)
Deli meat and cheese (I used ham and pepperjack, but use whatever deli meats and cheeses you'd like)

Directions

1. Put a bunch of pork rinds into a blender and "blenderize" (yep, "blenderize) until very fine ..almost a powder. You could also put them into a zip-lock baggie and crush them with your hand. Take out any big chunks that you weren't able to crush. 




2. Roll your cheese into your deli meat and hold together to roll and coat in your pork rinds. 




3. Heat a few tablespoons of oil in a frying pan and then add your rollups. Some of the cheese may start to melt out but just push it in a bit with your spatula or fork. When they are browned and starting to get crispy, remove from heat and place on paper towels. All Done!
