
Pizza is my weakness. Luckily, there are so many amazing low carb alternatives to the carbby kind, that i've totally been able to satisfy my pizza cravings! On the nights I know my family will be getting delivery, I plan ahead so I can make my own without feeling left out of the pizza party. This has been my number one go-to low carb pizza for years because it's the most simple..and never disappoints on flavor! As a bonus, I also fix this for my kids quite often. They can also help make the whole thing, which is fun and we usually end up with pepperoni happy faces :)
Ingredients
Pizza sauce (Always check labels, but most store bought pizza sauce is low carb)
Cheese, pepperoni (or just whatever pizza fixings you like)
Directions
1. Spread some pizza sauce on a low carb tortilla, then top with cheese and pepperoni (or whatever you'd like on your pizza)
2. Microwave your pizza for 1 minute to melt the cheese.
3. Transfer your pizza to a frying pan on medium heat (no oil necessary) and let heat up for a few minutes. This will get your pizza "crust" nice and crispy. You can check to see if it's done by lifting a side with a fork. When it's crispy and browned on the bottom, it's done! Transfer to plate. Add any hot pepper flakes or Parmesan cheese if you'd like!
4. Use a knife or a pizza cutter to slice . Enjoy!

Have you ever tried flatbread pizzas? I just put a little olive oil on them, put them in the oven for like 5 minutes or so on a cookie sheet, then take them out, put my toppings on, and pop them back in the oven for a few minutes to melt the cheese. Yum! I also like the pizza recipe with cream cheese/egg/parm "crust". Tastes delicious, and has the "feel' of hand-tossed dough!
