
Baked kale chips are one of my favorite low carb snacks. They are super easy to make, they're crunchy, salty, delicious, and healthy for you! The biggest bonus is that my kids love them too (although sometimes I hate sharing lol).
Ingredients
Fresh kale (you'll want quite a bit to make a good sized batch since it shrinks up alot)
Olive oil
Sea salt or other seasonings you'd prefer
Directions
1. Pick out the large thick stems from the kale and put the leaves in a large bowl
2. Toss with olive oil and sea salt (or any other seasonings you'd prefer, although I really like them just lightly sea salted)
3. Lay out kale leaves in a single layer on a cookie sheet and bake in the oven at 250 degrees for about 15-20 minutes, turning once at half-time. ..and done!
I've had a lot of kale chip fails, but i've started to really get the hang of it after a few trial and error runs. Some suggestions...
-If the kale has too much olive oil, they may take longer to bake.
-Do not oversalt! My first few batches were way too salty. I kept thinking that kale probably needed a lot of salt to taste good, but it's really not the case.
-Keep a close eye on oven time. Once the kale is burned a bit, they don't taste very good at all. They go from "perfect" to "overdone" really quickly!
