As my low carb lasagna was on it's last 15 minutes in the oven, I jumped on my
Low Carb Pinterest Board to see if I'd pinned any quick and easy recipes for a low carb bread that would make do as a sub for garlic bread. I ran across
THIS RECIPE for
Flax Sandwich Buns, which was really my only choice because it was the only one I had all the ingredients for, but I really was pleased with this recipe! The taste took a few minutes to get used to i'll admit. I'm now very used to the taste of baked goods that use nut flours, but i'd never baked anything using flax meal as my base. I will say that these tasted best when very toasted. I simply used a regular muffin tin to bake them, then I cut them in half and then put them on a cookie sheet and back in the oven on broil for about 2 minutes. You could also toaster them.
I added butter and extra garlic salt for the ones I was eating with my lasagna.
and let me tell you, it was SO nice to have a hefty chunk of bread to eat with lasagna!
I also toasted 2 more in the morning to make a delicious mini sausage, egg, and cheese mcmuffin.
