One of my favorite quick and easy lunch or dinner recipes is Italian meatballs with sauce and melted cheese.
I heat frozen Italian meatballs in a sauce pot on the stove with either low sugar marinara sauce or pizza sauce (which is almost always low carb), or sometimes I mix them both together. These are usually lower sugar/carb options than spaghetti sauce. Although if you can find a spaghetti sauce with a sugar/carb count your comfortable with--great! When the meatballs are heated through and the sauce is hot, I put it in a big bowl and top it all off with shredded mozzarella or parmesan cheese. So delicious! It makes a great low carb alternative when your craving spaghetti.

i find most pizza and spaghetti sauces too high carb. there is one brand that's low (i think it's Rao?) but like $8 a jar! so i use the lowest carb tomato sauce i can find- they're different, you have to read labels, and spice it up myself with garlic, italian seasoning blend, and a little crushed red pepper. going lower carb on the sauce makes up for the convenience of using frozen meatballs which usually contain bread crumbs and stuff. Thanks for your ideas Jessie, i love your "non-recipes", that's how i cook, i can totally relate to your posts.
