Mixed Fruit and Nut Salad with Low Carb Dressing


I love a good salad as much as I love cupcakes. Sounds crazy I know, but it's fun  throwing together all sorts of yummy ingredients and trying different low carb dressings. So many flavors and textures--bright colors, vitamins, and antioxidants. I try to eat a salad a few times a week and sometimes it ends up to be daily. There's so many awesome combinations out there---trust me, salads aren't boring! 

The one pictured above was one of my favorite ingredient combos to date. It was so simple, but mouthwatering good!


Salad Ingredients
Chopped strawberries
Chopped fresh baby spinach
Chopped boiled egg
Blueberries
Avocado
Pecans

Dressing: Walden Farms: Super Fruits Balsamic Vinaigrette (0 cal/fat/carb/sugar)
