I love a good salad as much as I love cupcakes. Sounds crazy I know, but it's fun throwing together all sorts of yummy ingredients and trying different low carb dressings. So many flavors and textures--bright colors, vitamins, and antioxidants. I try to eat a salad a few times a week and sometimes it ends up to be daily. There's so many awesome combinations out there---trust me, salads aren't boring!
