Bacon and Cheese Stuffed Pablano Peppers

I am a hot and spicy kinda gal...when it comes to my food anyway ;).  I raided my mom's fridge and found some pablano peppers that right away I knew I wanted to stuff with cheese, and my mom suggested I stick some bacon in there too...her bacon, so who am I to turn down free ingredients?! So that's the yumminess that you see here...bacon and cheese stuffed pablano peppers.

Cheese (your choice) I used southwest cheddar

Like I said before... I love spicy food, but I'm not a masochist so after cutting the tops and a slit in the peppers, I removed the seeds which lessens the heat. After frying up my bacon (you could also use real bacon bits here instead), I simply stuffed the crispy pieces and some chunks of cheese into the peppers and then sort of squeezed them closed and baked them at 350 until they were a bit soft and all the cheese was good and melty. So simple and MAN they were good! Oh and if your not a fan of spicy foods, you could you could do the same thing (or try different ingredients) and stuff bell peppers instead.

  3. Those look yummy. Looks like jalapeño peppers though. They are good with cream cheese and bacon too. I know what I'm getting from the store this evening!

  4. I've made this before no grilling necessary, the oven will do the work... I also add mild pineapple salsa.....

  6. I love this recipe! The hotter the better! Either grilled or broiled poblanos, jalapenos, or green chile, this recipe is awesome.
