Omelette muffins were one of the first things I made as a newbie low carber 5 years ago. Because I had a new baby then, I wanted something I could make a bunch of at one time and then be able to easily reheat throughout the week at any time. These were the epitome of quick, easy, and convenient!
Taco salad is one of my personal low carb food favorites. It's quick and easy, and never fails to satisfy! Just a quick note--I use ground turkey as a substitute in all beef recipes. It's healthier for you and there's almost no taste difference.
I found a huge tub of ready-made pico de gallo on sale and so I grabbed some avocados, limes, and a bag of precooked shrimp to make quick and easy shrimp de gallo ceviche. Literally that's all there is to it. I thawed the shrimp, cut up the avocado, and threw it all together with the pico and then doused it with tons of lime juice and added some sea salt. DONE! It's a perfect low carb summer meal..or snack, and soooo good! I gave half to my mom whose also a fellow low carber, and we ate on this for two days.
