I found a huge tub of ready-made pico de gallo on sale and so I grabbed some avocados, limes, and a bag of precooked shrimp to make
quick and easy shrimp de gallo ceviche. Literally that's all there is to it. I thawed the shrimp, cut up the avocado, and threw it all together with the pico and then doused it with tons of lime juice and added some sea salt. DONE! It's a perfect low carb summer meal..or snack, and soooo good! I gave half to my mom whose also a fellow low carber, and we ate on this for two days.
