Taco salad is one of my personal low carb food favorites. It's quick and easy, and never fails to satisfy! Just a quick note--I use ground turkey as a substitute in all beef recipes. It's healthier for you and there's almost no taste difference.
I usually eat taco salad without a shell at all, with all the taco fixin's thrown together in a bowl, but i've also made a few different low carb versions WITH a taco shell or taco bowl. Both of these options are really simple!

Low Carb Tortilla Taco Salad Shell
If you want to eat taco salad and truly not feel like your low carbing at all, making a tortilla bowl is super easy. I sprayed both sides of a low carb tortilla with pam (you could just use any cooking oil here) and then laid it inside an oven safe ramekin. You could use any other oven safe bowl shaped cookware here. It just needs to be small enough so when you lay it in the bowl, the sides are up high enough to form a tortilla bowl. You then put the bowl in the oven (350-400) for 10 minutes or so...Basically until the tortilla inside the bowl is stiff. You can check every few minutes since tortillas in the oven tend to go from perfect to burned pretty quickly!

Then of course there's the option of no shell or bowl at all. This is my usual go to, it's just fun to splurge with an extra 10 minutes to make it with a low carb shell sometimes. However, it's perfectly satisfying without!
