Warm Ricotta Cheese and Berries-It's Like Low Carb Cream of Wheat

Warm Ricotta Cheese and Berries: Low Carb Breakfast Option. It's like Cream of Wheat!

I know it sounds kind of crazy, but warm ricotta cheese with berries is one of my favorite breakfasts! 

It's very similar to cream of wheat, without the whopping 32 carbs per serving.  Even if you don't know what Cream of Wheat is...you should give this a try! It's a nice break from bacon and eggs at breakfast time. 

I use part-skim ricotta cheese because it has lower carbs. I'm sure brands may vary a bit, but most brands have 4 carbs per serving which 1/4 of a cup.  I usually add 1 packet of Stevia (1 tsp)  and then add my berries. Berries are the lowest carb fruits so it makes a great addition! You can of course omit the fruit altogether if you'd like to save on carbs. For this, my favorites are strawberries, blueberries, or blackberries. Then, heat it in the microwave for about 30 seconds (more if you need) then enjoy!!

    I added some lemon zest to my ricotta, and it was delicious. Frozen fruit worked well (I nuked it).
    I thought I'd pass a lowcarb tip onto to you that I picked up from Ali at The Inspiralizer. She makes sandwich wraps using collard greens (leaves) for the wrap part. OMG - that has revolutionized my lunches! They are sturdy and large, and add a nice crunch. I thought they might be over powering, but lets just say - turkey, bacon and avocado wraps are FAB!

Low carbing is not cut and dry. What works for me may or may not work for you.
