I know it sounds kind of crazy, but warm ricotta cheese with berries is one of my favorite breakfasts!
It's very similar to cream of wheat, without the whopping 32 carbs per serving. Even if you don't know what Cream of Wheat is...you should give this a try! It's a nice break from bacon and eggs at breakfast time.
I use part-skim ricotta cheese because it has lower carbs. I'm sure brands may vary a bit, but most brands have 4 carbs per serving which 1/4 of a cup. I usually add 1 packet of Stevia (1 tsp) and then add my berries. Berries are the lowest carb fruits so it makes a great addition! You can of course omit the fruit altogether if you'd like to save on carbs. For this, my favorites are strawberries, blueberries, or blackberries. Then, heat it in the microwave for about 30 seconds (more if you need) then enjoy!!
