Apples wouldn't be on my list of "best low carb fruits," due to their higher glucose index, BUT once in a while I do treat myself and enjoy a green apple here and there. I usually only end up eating half the apple and giving my kids the other half though. It's a great alternative to some of the other sweet things I could be reaching for so I don't beat myself up about it...it's an apple.
For this yummy little snack, I tore apart some provolone cheese slices and spread a little bit of almond butter on each one. I then put a thin slice of apple on top of and sprinkled them with cinnamon. Little bites of heaven! I used provolone cheese because it has a very mild flavor. So simple...so good.
