I discovered this luxurious snack combination the other day and wanted to share it with you!
Strawberries, fresh mint, blue cheese crumbles, and all of it drizzled with warmed coconut butter and sprinkled with unsweetened coconut flakes. That's it..ta da! Sooo good.
I get asked about fruit a lot so here's two of my main things...
-I eat fruits with low GI (glycemic index) and berries are lowest in sugar and carbs.
-As a rule of thumb when I eat fruit, I eat it in the morning so the natural sugars have a chance to be burned off throughout the day.
