Ok, so I know I've posted a how-to for Pepperoni Chips before, but I've recently started doing them just a little bit different and WOW, what a difference this one little tweak makes. They are still so easy to make, but these taste even better! They are also thicker than my previously posted pepperoni chips so they are great for dipping or adding to salads. These continue to be one of my favorite low carb snacks. I love to make them to go with lettuce boat sandwiches as a replacement for chips or as a movie snack. They'd be great at parties too!

This recipe for Low Carb Italian Meatball Soup is one that I keep the ingredients stocked for at all times. It's so simple, but OH SO GOOD. You can whip up this comfort meal in less than 30 minutes. It's full of flavor, but without the heavy carbs. We typically think of hot soups as a Fall and Winter meal, but I make this soup year round because it's so easy to make and it's always such a hit!

We take pancakes VERY seriously around here. Luckily I have found numerous ways to make all sorts of low carb versions to satisfy my Sunday Pancake cravings. My latest recipe was made using Quest Protein Powder...the Multi Purpose Mix. I've tried many protein powders, but this was my first time using Quest Nutrition's brand.
