Easy Low Carb Almond Bread

After years of experimenting with store bought low carb breads and tortillas, I am the first to admit in my distrust of most of these products. One of my best pieces of advice about this lifestyle is that if you want a low carb version of something...make it yourself. No, it's not the most convenient answer, but at least you can fully trust in your ingredients with the peace of mind that what you're making is truly low carb. My low carb lifestyle goal has always been to make the yummiest AND most simple low carb versions of foods I enjoyed before going low carb. This recipe for Low Carb Almond Bread is the perfect example of that...yummy AND simple. This is one to keep in your low carb arsenal for sure!

This bread is very versatile! It can be served toasted with low carb jam, made into french toast, eaten with low carb soups and chili, or as a dinner bread. One of the best things about this recipe though is that you only need 5 simple ingredients! 

1/2 cup softened butter
4 packets (teaspoons) of Stevia *optional*
5 large eggs at room temperature
1 teaspoon baking powder
2 cups almond flour

Directions

1. Beat together softened butter and Stevia.

2. Add eggs one at a time and beat together. It may look lumpy or curdled, but that's ok.

3. Add baking powder and almond flour to egg mixture and beat until well mixed.

4. Pour mixture into greased cake or bread pan and bake at 350 degrees. Depending on what size pan you use, your cooking time may vary from 25 minutes to an hour. The goal of course is for the center to be cooked through. I used a small, narrow glass bread dish and it took about an hour to cook through. If you use a wider pan, such as a cake pan, it will take less time. To test, insert a knife into the center. When it comes out dry, it's done.


Makes about 12 servings at approximately 3 net carbs per slice. 





Toasted and topped with organic coconut butter and cinnamon.

  1. Boy this looks good. I'm playing around with 'zero carb' (meat/water)-(lost #4 in 4 days) but I don't have it in me to be that strict . . . still eat the savory side of keto. I stopped stevia/xylitol and basically anything with a sweet flavor . . it just sets me off. How do you think this bread would be without the stevia?

    1. Some people have a higher sensitivity to sugar alternatives so that's definitely understandable. I think it would still be worth it to try for sure. This bread isn't really much of "sweet bread" anyway. Even with 4 Stevia, it's still only a hint of sweet. If you make it without, lemme know how it goes! :)

    2. I made it without any sugar or sugar sub and I ate it, BUT I had to make myself eat it. Taste and texture of real bread, but seriously missing something. It was aslight sweet taste in bread. The next time I put a little honey and 2 drops of liquid Splenda. It was SOOOOO much better.

  2. Wow I've been scouring Pinterest today for an easy low carb bread. So many of them need protein powders, whey, or xanthum gum (none of which I have!) . But I do have almond flour and stevia packets! Guess what I am making tomorrow!! Thanks!!!

  4. I'm curious, would I have to change the almond flour amount if I added some puree pumpkin and added a bit more stevia and some cinnamon? Maybe a little more flour?

    I have been following you page for a while now and I have to say you are an inspiration :-)
    I have a question and I sorry But it has nothing to do with the bread, but it looks delicious...
    It has to do with Xanthan gum. How do you use it to thickening a gravie. If I just put it in it will lump. Please help me....

    1. I know I'm not Jessie but I believe you can put it into some water to make a "slurry" and then pour it in little by little. That should keep it from clumping.

    1. You might want to calculate nutrition facts for yourself, though. All that butter, the egss, the high-calorie content of the almond flour - this recipe is EXTREMELY high calorie. Not to mention high cholesterol. It did taste good, but I didn't realize just how high calorie this was until it was too late. I would have been better off on my diet if I'd just eaten real bread.

      There are plenty of other easy recipes out there that aren't as bad for you as this.

    2. According to my calculations each slice is 203 calories, which isn't awful. That is cutting it into 12 slices, so a sandwich would be 406, depending on what you put in the sandwich this really isn't horrible. Not sure why you think this is too many calories. Also, the cholesterol all comes from good sources so I wouldn't worry about that either. There is mounting evidence from current studies stating that eating butter, eggs, etc help cholesterol, not hurt it, like we have all been led to believe for so many years. I do not think your last statement is valid as this recipe is not bad for anyone. If it doesn't fit into your macros, or way of eating, like you said there are plenty of others out there.

  21. Just tried making it and it came out looking good! It was a bit too yellow and tasted alot like beaten eggs. Do you think lessening amount of eggs will work too? And what about a bit of salt?

  24. According to my calculations using MyFitnessPal, assuming 12 slices per loaf, the macro nutrient profile for one slice is as follows:

    Carbs 3.5g (6%}
    Fat 19.3g (80%)
    Protein 7.3g (14%)

    Add a little butter or cheese and it becomes a nearly perfect keto snack!

    I'm heading to the store for some almond flour now!

Thanks for visiting, I love hearing from you, however it still always surprises me how many mean and rotten comments I receive, so please remember that I post what I eat merely as a suggestion of ideas for others. Low carbing is not cut and dry. What works for me may or may not work for you. Also, I live exclusively low carb, but I don't live my life counting them so I don't often include the net carb counts on recipes. Happy low carbing ya'll! :)
