I don't know why I haven't thought to share this with you guys before now, but this my favorite way to make low carb sauces (or you could call it a dressing too I guess) that you can eat warm or cold and enjoy so many different ways...salads, chicken, fish, or as a veggie dip! It's also so simple to make that it's just plain silly.

I recently posted my recipe for Low Carb Almond Bread, but I felt that this Low Carb French Toast deserved it's own post because it's JUST THAT GOOD! Seriously you guys...french toast! In the low carb world, having this as a breakfast option is just heavenly! Another bonus, it was a hit with my kids too :)
After years of experimenting with store bought low carb breads and tortillas, I am the first to admit in my distrust of most of these products. One of my best pieces of advice about this lifestyle is that if you want a low carb version of something...make it yourself. No, it's not the most convenient answer, but at least you can fully trust in your ingredients with the peace of mind that what you're making is truly low carb. My low carb lifestyle goal has always been to make the yummiest AND most simple low carb versions of foods I enjoyed before going low carb. This recipe for Low Carb Almond Bread is the perfect example of that...yummy AND simple. This is one to keep in your low carb arsenal for sure!

Breakfast is my favorite meal! It's always so motivating to start my day deliciously low carb. My goal is to always keep it simple, but to never sacrifice taste. It may sound silly, but I like to end each breakfast feeling like I spoiled myself a little bit. It's a perfect way to start the day! I thought it would be fun to do a visual round-up of 20 of my favorite and frequently eaten breakfasts!
As I started my breakfast this morning, I remembered my avocados in the fridge. I am the WORST when it comes to using avocados before they go bad. Luckily when I pulled mine out it was ripened to perfection. I love eggs paired with avocados! In fact, one of my all time recipes is a Baked Egg In an Avocado. However, I typically just slice up a half (save the other half for another day) and throw on some salt and eat it along side my eggs, but I wanted to try a little something different today. I've seen recipes for "avocado fries" floating around on the web lately, but most recipes call for flour or panko, which are both "no way's" in the low carb world. I've also seen low carb recipes that call for coating in egg and heavy cream first and then using shredded cheese, crushed pork rinds, or almond flour. Those are all well and fine i'm sure, but as usual my mind started working on how I could simplify it AND and keep it lower in carbs. The result...yummy low carb fried avocados using just 1 ingredient!
