Low Carb Chili in a Bell Pepper Bowl

I'm a big fan of red and green bell peppers and I try to come up with different ways to use them besides just roasting them in the oven. I recently discovered an awesome brand of organic frozen meals called Beetnik, and they have a really good low carb Chili at just 8 net carbs for the whole thing! The only problem for both  is that it's not a very big serving of food. I wanted to make this a more substantial meal so I put it in a cooked bell pepper and WOW! This is definitely my new favorite way to eat chili. I need to find a great low carb chili recipe, but for now this Beetnik chili in a bell pepper really hits the spot. Oh wait...it's a CHILI PEPPER! See what I did there? 

An easy way to cook the bell pepper: Cut the top off of the bell pepper and remove the middle portion and seeds. Put a few tablespoons of water in a small bowl and place the bell pepper upside-down in the bowl (open part down.) Microwave for 3 minutes or until bell pepper is soft enough to easily pierce all the way through with a fork.


That's it y'all! Then you just fill your cooked bell pepper with the cooked low carb chili of your choice. I ate a little bit of bell pepper with each bite of chili or you could eat all the chili first and then eat the bell pepper. Either way it's delicious!

There's a lot of great recipes out there, or you can try the Organic Beetnik Chili which I found at Harps. Atkins also makes a good microwavable low carb chili, but i'd choose an organic option any day.

  1. This is a super clever idea. Try using Eden Soy black beans in your chili. Great product and very low carb.

  2. What a excellent idea. Never heard of Beetnik- will see if Walmart carries(do not have a Harps near me). There are other options anyway(Healthy Valley and Amy's I believe makes chili). Anyway, thanks so much for the recipe(and your website- *I've been following you for since last year).

I also appreciate that you have done and put so much hard work into this to make it easy for a person like me. God Bless You over and over again for your generousity with these wonderful recipes. Some people are just mean people and they are out there, but don't listen to them. You are kind, generous, and very charitable with this website. Oh and did I mention you are drop dead gorgeous! Mean people are jealous and just mean. and if they are mean when they are young-- when they get old they will be meaner; however, when you get older, you will get sweeter! Thanks for visiting, I love hearing from you, however it still always surprises me how many mean and rotten comments I receive, so please remember that I post what I eat merely as a suggestion of ideas for others. Low carbing is not cut and dry. What works for me may or may not work for you. Also, I live exclusively low carb, but I don't live my life counting them so I don't often include the net carb counts on recipes. Happy low carbing ya'll! :)
