If you're tired of eating eggs for breakfast, here's a great no-egg alternative that definitely reminds me of Cream of Wheat, but with a smoother texture. It couldn't be more simple either! You may hesitate to try, but I think it may surprise you just how good this is! It's rich, sweet, warm, and creamy and it's such a good change of pace for mornings. It even makes a great snack!
- Whole Milk Ricotta Cheese (check labels but you should be able to find ricotta for 4 grams or less net carbs per serving, which is usually 1/4 cup)
- 1-2 packets of Stevia
- Berries of your choice *optional
Spoon out 1 or 2 servings of ricotta into a bowl. Warm in the microwave for about 30 seconds. Add 1 or 2 packets of Stevia and stir. Add your choice of berries. That's it!

* If your wondering why I suggested berries, remember that berries are the lowest carb fruits so strawberries, blackberries, blueberries, raspberries...these are the best options for fruit additions. For this, strawberries have been my favorite to add!
